Blueberry season is upon us and there is nothing like fresh picked blueberries! Sweet juicy blueberries are the ABSOLUTE best and my family can eat through a pint or two in an afternoon easy! I still occasionally buy blueberries from the grocery store if they're on a great sale and usually I'm not disappointed, but this last batch I bought were SO tart that I needed to do something with them. We had just made blueberry cobbler for 4th of July so I wanted something less sweet and somewhat healthy! So a breakfast (or dessert!) Blueberry oat crumble it is!
This can be made with fresh or frozen blueberries- I ended up doing 1 cup of each and it came out perfectly!
Also, if you want to turn these into breakfast bars instead of a crumble, just line the pan with parchment paper or aluminum foil and grease it! Then pop them in the fridge and they're great to grab as a quick snack if you're heading out, or if you're like me and have children that are STARVING the second they wake up, they're perfect to satisfy little bellies! They freeze great too!
As a crumble this tastes AMAZING over vanilla ice cream fresh out of the oven! But it equally tastes great cold on yogurt! I love that I can eat it different ways for a few days in a row without getting tired of it!
Ingredients:
Crust and Crumble:
- 1/2 Cup Salted Butter
1/3 Cup Coconut Flour
3/4 Cup Old Fashioned Oats
1/2 Cup Cane Sugar
1/4 Cup Coconut Sugar
Blueberry Filling:
2 Cups of Fresh or Frozen Blueberries
1/4 Cup Cane Sugar
2 Tablespoons Lemon Juice (or 2 drops of Lemon EO)
Directions:
Preheat oven to 350 degrees. Line an 8 inch square pan with aluminum foil (for bars) and spray with cooking spray. Set aside.
In a large microwave-safe bowl, melt the butter for approximately 1 minute.
Add the flour, oats, sugars into the bowl with melted butter
Stir to combine into a crumbly mixture
Press 3/4 of crumble mixture into bottom of square pan
Add cane sugar and lemon EO to blueberries and stir to combine
Pour blueberries over the crumble mixture
Spread the remaining crumble mixture over the top of the blueberries
Bake in preheated oven for 50-55minutes
Enjoy warm over ice cream or eat it cold for a yummy breakfast treat!
