Healthy brownies?! Uh, yes please! Okay, maybe they're not THAT healthy, butttttt they're healthier than regular brownies and that's gotta count for something, right?!
These are super simple and fun to make with your kids! Did you know that Coconut sugar is high in antioxidants, iron, calcium AND potassium? It makes me feel WAY better about giving my kiddos something with "sugar". Granted, the chocolate obviously has sugar so it's still sweet, butttttt the added coconut sugar helps it not just be empty calories!
For the oat flour, just grind up rolled oats in your blender/food processor and measure AFTER it's turned into flour.
Ingredients:
- 1 Cup of Milk Chocolate Chips
- 1/4 + 2TBSP Coconut Oil
- 1 Cup of Greek Yogurt
- 2 tsp Vanilla
- 1/4 tsp Salt
- 1/2 tsp Baking Soda
- 1/2 Cup Coconut Sugar
- 3/4 Cup Oat Flour
- 1 tsp Cocoa Powder
- 1/2 Cup Semi Sweet or Milk Chocolate Chips to stir in/add on top
Directions:
Heat oven to 350
Line 8x8" pan with parchment paper or aluminum foil and grease/spray
Microwave coconut oil until melted and pour over chocolate chips and stir until all the chips are melted
Add greek yogurt to chocolate mixture and set aside
In a separate bowl, add coconut sugar, oat flour, salt, baking soda, vanilla and cocoa powder and stir
6. Pour chocolate mixture into bowl, add in 1/4 cup of chocolate chips and stir until just combined
7. Pour into prepared pan and sprinkle remainder of chocolate chips on top
8. Bake in preheated oven for 22-25 min.
These taste incredible fresh out of the oven, topped with icing of choice, in a bowl with ice cream or even cold! Enjoy!
