Easy Cookie Cake

We are a cookie loving family....like, a little too much. The cookie jar on my counter is almost always full...and gets refilled once a week or so with fresh cookies...it‘s a rare sight if the cookies stay in the jar more than 5-7 days...It's a problem. Every time I walk in the kitchen, that cookie jar just stares at me and calls to me....and I can't ignore that call. It's like in Frozen II where Elsa hears that calling and cant ignore it. If I walk out of the kitchen that jar is literally all I can think about. It consumes my thoughts until I go to that magical jar and eat a cookie. Like I said, it's a major problem I have. We eat decently healthy, but then ruin it all with cookies. But I mean, it could be worse, right?! We could eat super junky ALL the time PLUS eat cookies every 5min. Also, by WE, I mostly mean me....


Anyways, we love cookies in our house so it was no surprise to me when I asked my husband what kind of cake he wanted for his 30th quarantined Birthday and his response was a cookie cake. SO, I'm kind of a cookie snob but I'm here to tell you that seriously this is the BEST cookie cake. It's crunchy enough on the outside, the perfect amount of gooey on the inside, it holds it's shape -you know how the store bought ones are either crunchy all the way through, or they're cooked good on the outer rim but the center is kind of mushy and breaks when you hold it (if you're like us and just eat it like a pizza slice), and it's flipping delicious.


I want to say that we loved it and happily ate it as dessert for the next few days, but I can't, because we're disgusting and we literally finished it the day AFTER my husbands Birthday.....keep in mind that we're quarantined so it's not like we had friends over who helped us eat it. We had my husband, myself and our two year old had 1/2 of a piece....soooooo do the math, or don't, and just judge how gross we are....or admire us for being so committed to eating something we love in the perfect period of freshness. Either way, we enjoyed it and I hope you will too!




 

Ingredients:

- 1/2 Cup Butter at Room Temp

- 1/2 Cup Brown Sugar

- 1/4 Cup Granulated Sugar

- 1 Egg

- 2 tsp Vanilla Extract

- 1/2 tsp Baking Soda

- 1/4 tsp Baking Powder

- 1/8 tsp Salt

- 1 1/2 Cups All Purpose Flour

- 1 Cup Semi Sweet Chocolate Chips



 

Directions:


1. Preheat oven to 350 degrees


2. In a mixing bowl STIR butter and sugar together


3. Add in egg and vanilla


4. Stir baking soda, powder, salt, and flour


5. Add Chocolate chips and stir until just combined



6. Bake in a 10in springform pan for 15-17min



7. Let cool 5min before undoing the springform


8. Once cooled, decorate with icing of choice!


9. Enjoy!
