Easy Chocolate Earthquake Cake

Here's a quick and easy way to make "just a box cake mix" fancier!


It all started when my son asked to make his Grandpa a Birthday cake and all I found in my pantry was a chocolate boxed cake mix. I wanted to dress it up a bit instead of just making a boring chocolate mix, so to pinterest I went! I found a recipe for something called an "Earthquake" cake which sounded delicious, so I tweaked it a little bit and now that's all we make every time I buy a boxed chocolate cake mix!

 

RECIPE


Ingredients:

- 1 German Chocolate (or Devils Food Cake) Cake Mix

- 1 1/3C Water

- 3 Eggs

- 1/3C Melted Coconut Oil

- 1/2C Shredded Coconut

- 1/2C Chocolate Chips

- 1/2C Chopped Pecans

- 1/4C Butter

-1/2C Brown Sugar


Icing

- 8oz Cream Cheese (Softened)

- 1/4 Butter

- 16oz Powdered Sugar

- 1 tsp Vanilla


DIRECTIONS

  1. Preheat oven to 350 degrees

  2. Place 1/4C butter in 9x13 pan and place pan in oven for 5min

  3. In a large mixing bowl, add cake mix, water, coconut oil, and eggs.

  4. Beat on medium speed for 2 min

  5. Take pan out of oven (butter should be melted completely)

  6. Add brown sugar, pecans, coconut, and chocolate chips to buttered pan



7. Pour prepared cake mix on top of brown sugar layer

8. In a separate bowl, add cream cheese, butter, sugar, vanilla and beat until mixed

9. Plop cream cheese on top of cake and with a knife swirl it in



10. Bake for 45min (toothpick trick won't work to tell when it's done because of the cream cheese layer)

11. Let cool and then top with fresh whipped cream (optional! But highly recommended!)

12. Enjoy!
