The BEST side dish (Trust me)

I've never really been super into veggies until the last few years but had I tried this veggie side dish years ago, maybe I would've seen the light sooner! This is seriously the best side dish to serve with almost any meal, and it's mostly healthy (you could totally use coconut oil or some other healthier butter substitute). I have made this recipe at least 30 times and I've never been disappointed! Also, that goes to show how easy and forgiving it is if your rice comes out a little too sticky or too dry or whatever! I usually use quinoa and wild rice, but I've used jasmine rice, white rice, brown rice, and black rice and it's always came out tasting amazing, so use whatever rice you prefer! The only thing that may change is your cook time for the rice. I also usually use fresh broccoli and then blend it with fresh or frozen spinach or kale, but with the whole "social distancing" thing going on, I'm trying to stay home as much as possible. So for this recipe I used frozen broccoli and kale and it still came out perfect. This recipe is also perfect for those littles that don't like veggies because you really can't taste them! My kiddos love broccoli and any veggie I give them, so that's not an issue for us (hiding veggies or convincing them to eat them), but we all just seriously LOVE this side dish so much that it's just a bonus there's veggies in it.



Ingredients:

- 1C Wild Rice

- 1C Quinoa

- 2.5C Water

- 16oz Broccoli

- 12oz Kale or Spinach (frozen)

- 1/2 Stick of Butter/ 4TBSP

- 2tsp Paprika

- 1tsp Salt

- 1tsp Pepper

- 2TBSP Garlic


Directions:

1. Add rice, quinoa, and water to pressure cooker. Seal pressure and cook for 12min on rice setting. Then let it natural release for 10minutes



2. As the rice is cooking, in a blender (or chop by hand) "rice" the broccoli and kale (or spinach) until very finely riced/chopped.


3. Fluff the cooked rice and quinoa


4. Add broccoli "rice" to rice and quinoa mixture


5. Keep pressure cooker on "warm" setting or boost the pressure so the pot will continue to be hot

6. Add the butter, garlic, salt, pepper and paprika

7. Cook for 3-5 min or until the butter is fully melted and everything is hot



That's it! Super easy and delicious! I've paired this with salmon, grilled chicken, added it to stir fry, served with beef tips and gravy, served with bbq pork, added chicken and cheese and made it into a casserole. It's so versatile which is probably why we have it at least once a week! Let me know what you think!
